The Spring Salad
The warm weather is slowly back. Let’s celebrate and put some sunshine on our plate.
Ingredients:
- half a head of cauliflower
- 1/4 of a red bell pepper
- half a zucchini
- 1 medium size tomato
- 5 large leaves of kale or other leafy greens
- 4 shitake mushrooms
- herbs : parsley, basil
- 2 tablespoons of fermented sauerkraut
- salt/pepper
Instructions:
- Cut the cauliflower in large pieces and pulse in a food processor until it looks like couscous
- Cut the red bell pepper, zucchini, tomato and mix them in a bowl with the cauliflower
- Cut the mushrooms and kale and slightly cook in a pan. No need to add anything
- Mix everything in a large bowl, toss with salt, pepper, the herbs and a drizzle of olive oil
- For the cherry on the cake effect, slice half an avocado and toss on top
- Smile and eat immediately or vice-versa
