The Spring Salad

The warm weather is slowly back. Let’s celebrate and put some sunshine on our plate.

Ingredients:

  • half a head of cauliflower
  • 1/4 of a red bell pepper
  • half a zucchini
  • 1 medium size tomato
  • 5 large leaves of kale or other leafy greens
  • 4 shitake mushrooms
  • herbs : parsley, basil
  • 2 tablespoons of fermented sauerkraut
  • salt/pepper

Instructions:

  1. Cut the cauliflower in large pieces and pulse in a food processor until it looks like couscous
  2. Cut the red bell pepper, zucchini, tomato and mix them in a bowl with the cauliflower
  3. Cut the mushrooms and kale and slightly cook in a pan. No need to add anything
  4. Mix everything in a large bowl, toss with salt, pepper, the herbs and a drizzle of olive oil
  5. For the cherry on the cake effect, slice half an avocado and toss on top
  6. Smile and eat immediately or vice-versa
