Chocolate Almond Butter Brownie

You like brownies? Stop eating these big fat brownies full of white sugar, white flour, eggs, etc and start making your own!

Vegan brownies are good. Vegan brownies are tasty. We made a version with almond butter swirl last night. You can use peanut butter instead if you like it better. In any case, it will be to die for!


Chocolate Almond Butter Brownie


  • 1/3 cup smooth raw organic almond butter
  • 1/4 cup + 1 Tbsp coconut oil
  • 1/4 cup semisweet chocolate chips
  • 2 Tbsp ground flax seeds + 6 Tbsp water
  • 3/4 cup raw cane sugar or coconut sugar
  • 1 tsp vanilla extract
  • 1 cup gluten-free flour (we use Bob’s Red Mill)
  • 1 tsp baking powder


  1. In a small bowl, stir the almond butter and 1 Tbsp melted coconut oil until smooth. Set aside
  2. In a large bowl, mix the ground flax seeds with the water and let it sit. This creates flax eggs, it is an amazingly healthy egg replacer
  3. Preheat the oven to 350 degres F. Lightly oil a 8-inch square pan and set aside
  4. In a small saucepan over low heat, melt the vegan chocolate chips and the 1/4 cup coconut oil stirring occasionally. Remove from the heat and set aside
  5. Add the sugar and vanilla to the flax eggs and blend until there is no more crumble. Stir in the melted chocolate and blend well. Add in the flour and baking powder and mix well. The texture will be nice and doughy.
  6. Pour the batter in the pan and swirl in the almond butter mixture
  7. Bake for 20, 25 minutes until the top of the brownie bounces when you touch it.
  8. Let cool before cutting and eating. Be patient 😉
