The Mystery of Romanesco Broccoli

This is certainly one of the most amazing vegetable on heart. It belongs to the same family as cauliflower and cabbage. We can say that is the ultimate fractal vegetable.

Fractal forms are pretty common in nature actually : snowflakes, river courses, branches, leaves veins…

But this one is particularly stunning thanks to its beauty and popping color.

Its pattern is a natural representation of the Fibonacci or golden spiral, a logarithmic spiral where every quarter turn is farther from the origin by a factor of phi, the golden ratio.

And like any vegetable, it’s super healthy of course. Romanesco is rich in Vitamin C, folic acid, potassium, and fiber.

Eat it raw with a nice dip or roasted with garlic and olive oil. Simplicity is the way to go!

In any case, you will totally impress your guests and family by presenting such a dish!
