Our special veggie burgers

These are our new thing lately, we just love making and eating them.

The best part is that you can make a bunch and store them in the freezer and re-use whenever you have friends over, for your lonely pasta or sandwich dinner nights, with rice, in sauce, anything! And we have tried serving them to different friends and family, it makes everyone happy, even the meat lovers!

Ingredients:

  • 1 onion minced
  • 2 cloves garlic minced
  • 2 cups bread crumbs
  • 2 Tbsp flax seeds + 6 Tbsp filtered water
  • 1 cup cooked black beans, mashed
  • 1 cup grated carrot
  • 1 red bell pepper
  • 1/4 cup finely chopped parsley
  • 1/4 cup finely chopped basil
  • 1/4 cup scallions
  • 1 Tbsp olive oil
  • 1 Tbsp Tamari (soy) sauce
  • 1 tsp cumin
  • 1 tsp oregano
  • 2 tsp chili powder
  • pinch of chili pepper flakes
  • salt

Instructions:

  1. Preheat your oven to 375 degres F
  2. Make the bread crumbs by mixing small pieces of bread in your food processor
  3. You can also mash the beans using the food processor or in a bowl with a fork
  4. Slice the onion and garlic very thinly and cook in a pan for few minutes with a Tbsp of olive oil
  5. Chop the red bell pepper thinly
  6. In a large bowl, combine all the ingredients together besides the spices and herbs. use your hands better that utensils, it’s much more fun and it will work better
  7. Once perfectly combined, add the spices, herbs, salt and pepper
  8. Then just shape the mixture into patties
  9. Put on a baking sheet and bake for approximately 15 minutes each side. Just flip them once the bottom side is nice and crispy

All right, we have to admit, these are amazing.
