Layered Raw Vegan Chocolate Coconut Tart

You might have noticed that we love chocolate.

Yes we do. So much. We have even already posted a raw vegan chocolate-coconut tart recipe. But, this one is different. It is a little bit more wild as you will need fresh coconut meat and coconut water from a young coconut.

You can usually find fresh young coconuts (the outside is white) in health food stores and sometimes in African, Caribbean or Asian markets.

And we have also found the best advice to open them. Just follow carefully these instructions by Healingsamurai 🙂

Layered Raw Vegan Chocolate Coconut Tart

Ingredients:

Crust:

  • 1 1/2 cup almond meal
  • 1 Tbsp melted coconut oil
  • 3 Tbsp maple syrup or honey
  • 1 tsp vanilla extract
  • 1/4 tsp salt

Coconut layer:

  • 1 cups raw cashews, soaked overnight and drained
  • 1 cup coconut meat
  • 3 Tbsp maple syrup, agave nectar or honey
  • 1 tsp vanilla extract
  • coconut water

Chocolate Layer:

  • 1 cups raw cashews, soaked overnight and drained
  • 3 Tbsp melted coconut oil
  • 2 heaping Tbsp raw cacao powder
  • 3 Tbsp maple syrup, agave nectar or honey

Instructions:

Crust: Mix everything in a food processor until it sticks together. Press into a tart dish and put in the fridge.

Coconut Layer : Blend all the ingredients in a blender adding coconut water little by little. The mixture has to be smooth and thick. Spread on top of the crust and put back in the fridge

Chocolate Layer: Blend all the ingredients in a blender. The mixture has to be smooth. Spread on top of the coconut layer and put back in the fridge.

It is best to leave it overnight and enjoy it the next day. If you are too impatient, wait at least for 4 hours so that it solidifies nicely.

Sprinkle with cacao nibs and shredded coconut before serving.

  1. This cake looks so good. I have seen the young coconuts in the fruit shop – a little pricey. And I wasn’t quite sure what to do with them. But this looks so good, it should be the incentive I need to give it a go.
