Raw Strawberry-Blueberry Cheesecake

I have been craving for fruits lately. I don’t know if it’s because of the sun who is out or because of the trees , the tiny leaves and all these flowers. Well, it is definitely something in the air that makes me want to feel light and rejuvenated. Fruits are the best!

Raw Strawberry-Blueberry Cheesecake

Crust:

  • 1 1/2 cup almond meal
  • 1 Tbsp melted coconut oil
  • 1.5 Tbsp maple syrup or honey
  • 1 tsp vanilla extract
  • 1/4 tsp salt

Cheesecake layer:

  • 3 cups raw cashews, soaked overnight and drained
  • 1 cup fresh coconut meat
  • 2/3 cup coconut oil
  • 3 Tbsp maple syrup or honey
  • 1 tsp vanilla extract
  • juice from 1 fresh squeezed lemon
  • strawberries sliced (6 large) and blueberries

Instructions:

Crust: Mix everything in a food processor until it sticks together. Press into a tart dish and put in the fridge.

Cheesecake Layer : Blend all the ingredients in a blender. The mixture has to be smooth and thick. You may need to add a little bit of water. Use the coconut water from the fresh young coconut if you haven’t drank it all already! Spread on top of the crust and put back in the fridge

Leave it overnight in the freezer or at least 4 hours.

1 hour before eating, top with fresh organic fruits and leave in the fridge. You can also add some shredded coconut if you want the whole coconut experience.

This is unexpectedly amazing, super refreshing. Well, you should just eat it now!
