First of all I want to thank Lori, my sweet boyfriend’s mom for finding the name of this dessert. Namaste is a sanskrit word used as a greeting in India. It has become very popular with the expansion of yoga and hopefully people realize the full essence of its meaning: “Namah” means bow, “as” means me and “te” means you which translates into “I bow to you”or “The Divine light in me acknowledges the Divine light in you”
Essentially, Namaste is a way of feeling the oneness, peace, and deep connection that has, is, and will always be within all of us.
This beautiful dessert is a great way of sharing gratitude and love.
All you need is a blender, 3 bowls for preparation, and 6 (12 or 14 ounces) glasses for serving. Make sure that you freeze bananas and strawberries for a few hours before. I suggest that you prepare this dessert right before you sit for dinner.
- 4 frozen bananas
- 8 frozen strawberries
- meat and water from 1 young coconut (or 2 more frozen bananas instead)
- 3 dates
- 1 Tbsp almond butter
- 2 tsp raw cacao powder
- 1 tsp vanilla extract
- 1 cup of pecans
- 2 Tbsp maple syrup
- ground cinnamon
- a mix of grains and nuts of your choice: hemp seeds, oats, almonds, macadamia, granola mix…
- cacao nibs or pieces of dark chocolate
- 1 pomegranate
- Crush 1 handful of pecans into big pieces, cover with one Tbsp of maple syrup and roast in the oven or the dehydrator
- Make the crust by hand crushing and mixing the dates and a handful of pecans to the texture you like. It should not be too sticky. Press into the bottom of the glasses
- Make the banana layer by mixing 2 frozen bananas, a pinch of cinnamon, 1 tsp of vanilla extract. Add a tiny bit of water if needed (1 Tbsp at a time). The texture has to be creamy. Set aside in a bowl.
- Make the chocolate layer by mixing 2 frozen bananas, 2 tsp of raw cacao powder, 1 Tbsp maple syrup and 1 Tbsp almond butter. Add a tiny bit of coconut water (1 Tbsp at a time) if needed to reach a creamy texture. Set aside in a bowl.
- Make the strawberry layer by mixing the coconut meat, the frozen strawberries and 1 Tbsp of coconut water. Add more water if needed. Set aside in a bowl
- Make the glasses by pouring the banana layer, the chocolate layer, and the strawberry layer one after the other.
- Add the roasted pecans, mix of nuts, cacao/chocolate pieces and the pomegranate on top
- Leave in the fridge until it is time for dessert!
Now all you need to attain real peace is a spoon!
